Ingredients
1 cup dried lentils (green or brown, rinsed)
1 large onion, diced
3 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 zucchini, chopped
1 cup broccoli florets
1 can (14 oz) diced tomatoes (or 3 fresh tomatoes, chopped)
6 cups vegetable broth (or water + veggie bouillon)
2 handfuls fresh spinach or kale
2 tbsp olive oil or coconut oil
1 tsp cumin
1 tsp smoked paprika
1 tsp turmeric
½ tsp black pepper
1 tsp sea salt (or to taste)
Juice of 1 lemon
Fresh cilantro or parsley for garnish (optional)
Instructions
Sauté
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook for about 5 minutes until softened.Add spices & veggies
Stir in cumin, smoked paprika, turmeric, and black pepper. Add zucchini, broccoli, and diced tomatoes. Cook for 2-3 minutes to bring out the flavors.Simmer the stew
Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, stirring occasionally, until lentils are tender.Finish with greens & lemon
Stir in spinach or kale and cook for another 2–3 minutes until wilted. Add lemon juice and adjust seasoning with salt if needed.Serve & enjoy
Serve in bowls, garnish with cilantro or parsley, and enjoy warm with a slice of whole-grain bread, rice, or a side of quinoa.
